这个句子it是形式宾语，真正的宾语是从句that the conference should have been cancelled.
至于楼上有知友说的用it's其实也对，只是理解不同(相当于宾语从句，省略了引导词that）
原句中we 主语，thought谓语，it是宾语，a pity的宾语补足语，that后面引导的是真正的宾语从句
