Milk contains various types of protein.When proteins are heated up,their chemical structure and color would change,causing the appearance of the pre-written letters.
After drying off the sugary or salty water,sugar crystal and sodium chloride crystal remains.
However,nothing would appear for dying out pure water,since all water molecules vaporized.
If you wrote the letters with low-concentration sulfate acid,after heating the paper up,the letters would also appear.However,this is due to the fact that higher concentration sulfate acid could carbonize the paper.
Pure water is formed by only water molecules.Therefore,after all water molecules vaporized,there will be nothing remains on the paper.
Salty water and sugary water are solutions of solid salt/sugar.After all water molecules vaporized,salt (sodium chloride molecule) and sugar molecules remain on the paper.
Because of the fact that we wrote the letters with those solutions,after we vaporize all the water molecules,the arrangement of the sodium chloride/sugar molecules would be the same as the pre-written letters.
Milk,too,is a mixture.According to the reasoning we mentioned above,after all water molecule vaporized,only the solvent in the milk (proteins) will remain on the paper.
