In this study,tilapia myofibrillar protein content,myofibrillar protein Ca2 +-ATPase activity and myofibrillar protein activity of thiol content,myofibrillar protein emulsifying activity as an index of frozen storage on tilapia myofibrillar protein materialized properties.The results showed that with the cold storage time,the tilapia myofibrillar protein content,Ca2 +-ATPase activity,active thiol content of myofibrillar protein decreased emulsifying activity were tested,and the longer the greater the degree of decline.Meanwhile,with the freezing temperature decreases,tilapia myofibrillar protein content,Ca2 +-ATPase activity,active thiol content of myofibrillar proteins with emulsifying activity will be reduced.Another added antifreeze samples,the myofibrillar protein content,Ca2 +-ATPase activity,active thiol content of myofibrillar protein emulsifying activity were decreased more than the sample without adding antifreeze small,showing inhibition of fish myofibrillar protein denaturation in the trend.
