本研究以罗非鱼肉肌原纤维蛋白含量、肌原纤维蛋白Ca2+-ATPase活性、肌原纤维蛋白活性巯基含量、肌原纤维蛋白乳化活性为指标,探讨冷冻贮藏对罗非鱼肉肌原纤维蛋白物化性质的影响.结果表明,随着冷藏时间的延长,罗非鱼肉肌原纤维蛋白含量、 Ca2+-ATPase活性、活性巯基含量、肌原纤维蛋白乳化活性都呈下降趋势,而且时间越长,下降的程度越大.同时,随着冷冻温度的降低,罗非鱼肉肌原纤维蛋白含量、 Ca2+-ATPase活性、活性巯基含量、肌原纤维蛋白乳化活性也会随着降低.另外有添加抗冻剂的样品,其肌原纤维蛋白含量、 Ca2+-ATPase活性、活性巯基含量、肌原纤维蛋白乳化活性等指标下降的程度比未添加抗冻剂的样品小,呈现出抑制鱼肉中肌原纤维蛋白变性的趋势.

In this study,tilapia myofibrillar protein content,myofibrillar protein Ca2 +-ATPase activity and myofibrillar protein activity of thiol content,myofibrillar protein emulsifying activity as an index of frozen storage on tilapia myofibrillar protein materialized properties.The results showed that with the cold storage time,the tilapia myofibrillar protein content,Ca2 +-ATPase activity,active thiol content of myofibrillar protein decreased emulsifying activity were tested,and the longer the greater the degree of decline.Meanwhile,with the freezing temperature decreases,tilapia myofibrillar protein content,Ca2 +-ATPase activity,active thiol content of myofibrillar proteins with emulsifying activity will be reduced.Another added antifreeze samples,the myofibrillar protein content,Ca2 +-ATPase activity,active thiol content of myofibrillar protein emulsifying activity were decreased more than the sample without adding antifreeze small,showing inhibition of fish myofibrillar protein denaturation in the trend.
