wouid have+过去式,应该是虚拟语气的,结合句子的意思就能看出来.

也就是说,说话人根据这个男士的外貌或者举止事先在心中做了一个判断,也就可以看成一个虚拟,而事实是,这位男士说话十分礼貌.
