是的，用进行时态是因为原句听起来是在强调这个逐渐演变的过程。如果用一般现在时/过去时也是可以的。

reducing the number of using electronic products 是典型的把英语词汇按照中文的文法逻辑拼凑起来，是中式英语，语法没错但逻辑不通。而且注意要用using 不能用use.

picking up a pen to write 可以这么说，但是不能用单数，应该用复数，因为主语 more people是集体名词本身是复数的。

句子可以改成 more and more people have stopped using electronic products and are picking up their pens to write
