为什么不可以是was in 1981,with the only point which was scored by Willam.

with the only point which was scored by Willam.是对的,你的说法复杂点而已,你用的是定语从句,写成这样就可以：with the only point scored by Willam.
原句with Willam scoring the only point.这样说肯定是为了强调人,人得了分,人是重点,所以用现在分词伴随.
took place in 1981强调动作,发生、举行,was表示状态,用在句子里动作马上弱化了,一般不这样用的.

我觉得是强调一分啊所以觉得是with the only point 是说分词要比从句好吗

分词比从句简洁，说起来不饶口，尤其在口语中，或者比较随便的书面语中。从句的使用不应该影响主句的平衡，从句太长显得太累赘
