摘要; 本论文以采后壶瓶枣和梨枣为试材,通过对枣果皮褐变度,活性氧代谢的研究,探索采后枣果皮活性氧代谢与其褐变的关系.结果表明:采后枣果果皮褐变度显著增大,果皮活性氧清除酶SOD、CAT活性和内源性抗氧化物质VC的含量均呈下降趋势,而O—2生成速率、H2O2含量及相对电导率均呈上升趋势;果皮SOD活性与O—2生成速率、CAT活性与H2O2含量均呈显著负相关,表明采后枣果在转红过程中抗氧化酶及抗氧化物质对活性氧的清除能力降低,导致活性氧积累;采后枣果转红过程中,相对电导率增大,MDA含量增大,可见枣果果皮膜脂过氧化作用加强.综上可知采后枣果转红过程中果皮活性氧代谢失调,膜脂过氧化作用加强,导致褐变的发生.

Abstract: By using the postharvest Huping jujube and pear jujube as test materials, and studying the browning degree and reactive oxygen metabolism of jujube peel, this article explores the relationship between active oxygen metabolism and browning of postharvest jujube peel. The result shows: the browning degree of the postharvest jujube peel increased significantly, the SOD, CAT activities and the VC content of endogenous antioxidants of the reactive oxygen scavenging enzymes in the peel showed a descending trend, while the production efficiency of O-2, content of H2O2 and the relative conductivity ratio showed an ascending trend. A significant negative correlation was found between SOD activities and O-2 production efficiency, as well as between CAT activities and H2O2 content; this showed that during the redden process of the postharvest jujube, there was an accumulation of reactive oxygen due to a drop in the scavenging ability of antioxidant enzymes and compounds, as well as a strengthening of
Jujube peel’s lipid peroxidation evidenced by the increases in the relative conductivity ratio and MDA content. Summing up the above, it is found that during the redden process of postharvest jujube, the causes of browning were due to reactive oxygen metabolic disorder and the enhancement of lipid peroxidation.
