You can't eat raw vegetables in China (unless they have a skin you can remove) because they still put human sewage on all the fields.As for foods in restaurants...it's hard to get anything that would be considered "healthy" - low salt,no msg,no sugar,high fibre,high nutrition.Nearly impossible.
find a local restaurant you like (relatively clean,nice boss) and ask them if you can photocopy their menu.Then,get some help translating the things that sound interesting.Trial and error.Good luck.
